Summer Spinach Salad with Herbed Avocado Spread

We must all keep our strengths up during the Job Search Summer of 2011. To my dismay, however, the late May weather in Hollywood is refusing to cooperate.

How can I possibly be expected to send resumes, proof introduction letters and hit up my producer friends for professional connections when external conditions are so radiant and my courtyard is almost entirely mine for the taking!

I need some gloom, grime and shab in my life, and pronto! Without it, I don’t really think it’s my fault if I continue to remain unmemployed.

Can any of you blame me?

A salad like this can help you maintain focus while so many enticing distractions swirl all around.  It’s a good combination of protein, iron, fat, fiber and carbs.  And if chicken isn’t your thing, you can also substitute 4 ounces of grilled hanger steak, three large shrimp or a 6-ounce salmon fillet.

But whatever you do, don’t leave out the herbed avocado spread, a little of which you should keep around at all times.  Aside from going great in salads, it’s fantastic in grilled paninis, and adds that little kick in the butt that will help you ignore the call of the jacuzzi!

Summer Spinach Salad with Herbed Avocado Spread

  • 2 cups chopped spinach
  • 1 hard or soft boiled egg, halved
  • 4-6 oz. grilled chicken
  • 6 cherry tomatoes, halved
  • 2 tbsp herbed avocado spread
  • 1-2 tbsp gouda cheese
  • 1 cup sugar snap peas
  • 1 tbsp Green Goddess dressing
